"Let's Go Fujian!"
Fujian cuisine is known to be light but flavorful, soft, and tender, with particular emphasis on umami taste, known in Chinese cooking as xianwei (鮮味), as well as retaining the original flavor of the main ingredients instead of masking them.
For this event, we will be preparing the following:

This dish uses "bao" stir fry techniques which require higher heat, hotter oil, and quicker stirring and tossing than regular stir-frying in order to keep the clams tender and flavorful.
As compared to other clams, razor clams taste brighter, sweeter, and meatier.

A Fu Jian traditional dish with both healing and nourishing benefits, Jiang Mu Duck , or Ginger Duck is a popular winter dish in Fu Jian and Tai Wan, made with duck, ample ginger, sesame oil and high degree alcohol rice wine.

Rouyan is a must try in Fuzhou. It's also called meat skin wonton because its wrapper is made of port! Local people believe eating rouyan will bring one peace and happiness.
