IN THIS LESSON
"Let's Go Anhui!"
Anhui Province is an inland eastern Chinese province known for its Huangshan Mountains. Their low-hanging clouds, distinctive granite rocks, and twisted pines have been subjects of many classical paintings and poems, along with its Huizhou regional architectural style.
Anhui cuisine is known for its use of wild herbs, from both the land and the sea, and simple methods of preparation. Braising and stewing are more common cooking techniques than frying.
Anhui cuisine is heavily associated with tofu, with Chinese folklore crediting the creation of tofu to the Han dynasty prince Liu An who hailed from Shouxian.
For this event, we will be preparing the following:
-
Conch, sea cucumber, abalone, Jin Hua ham, black-bone chicken, fish belly, pork bones, quail eggs, dried scallops, tofu skin, bamboo shoots, ginger, and Chinese onion.
-

-
Firm tofu, sliced pork belly, green pepper, ginger, garlic, leek.
-
A surprise dessert! 🙈
